And, in order to keep on track with my new lease on life, I am making sure that there is always one dessert in the house. That way, we aren't jonesing for sweets. We have our reward for doing good at the end of the day:-) I made a few extra of these and without the embellishments, it is actually not that bad for you: One cookie is 133 calories and 6 grams of fat. Everything in moderation. <br />

As for my health, I am still being tackled by my hormones. They are making me very sick and I have to be on them for another month until they can implement a permanent solution to my problem. So, send me all your positive energy. I am going to need all the help that I can get! <br />

Also, <a href="http://www.5dollardinners.com/">$5 Dinners </a>inspires us all to make low cost dinners. In that spirit, I am taking what Pick N Save has on sale, pairing it with <a href="http://4.bp.blogspot.com/_0FCt-W4C4i4/TOl-LlLGOaI/AAAAAAAACQ8/nFy3TU1Zo2Y/s1600/Search%2Bfor%2BCoupons.jpg">coupons</a> and coming up with the tastiest money saving around! Lemons were on sales at Pick N Save for .59/each (normally 75/each)and they are HUGE! The strawberries, blueberries and whipped cream was on sale too! So, I grabbed a bunch of all of those to make my featured recipe today:<br />
<br />
<strong>Lemony Fruit Dessert Cups</strong><br />
Ingredients:<br />
1 cup sugar<br />
Zest of 3 lemons<br />
3 large eggs<br />
4 large egg yolks<br />
1 cup Lemon juice<br />
5 oz unsalted butter, chilled and cut into small pieces<br />
18 dessert cups<br />
1 lb strawberries<br />
1 lb blueberries, sliced strawberries, raspberries, blackberries, or any mixture of berries desired<br />
8 oz whipped cream<br />
Mint sprigs for garnish<br />
Powdered sugar for garnish<br />
<br />
1. Prepare and ice-water bath. Set a medium bowl in ice-water bath and set aside.<br />
<br />
2. Place sugar and lemon zest in a mortar and grind with a pestle to combine and release the oils. Transfer sugar mixture to a medium heatproof bowl along with eggs and egg yolks; whisk to combine. Place over a saucepan of simmering water and whisk until sugar has dissolved. Add lemon juice and continue whisking until mixture is thick and reaches 160 degrees on an instant-read thermometer, scraping down sides of bowl as necessary. Add butter and whisk until well combined.<br />
<br />
3. Strain lemon mixture through a fine mesh sieve set over prepared bowl. Cover lemon curd with plastic wrap, pressing plastic wrap directly onto surface. Transfer to refrigerator until completely chilled.<br />
<br />
4. To plate, take one dessert cup and fill the center with a scoop of lemon curd. Top with strawberries and/or blueberries. Finish with a dallop of whipped cream and garnish with mint and a shake of powdered sugar.<br />

I wasn't going to do the challenge. After all, it was 500 cupcakes. That's a lot of work. But, when I woke up in the middle of the night thinking about telling the story in cupcakes on a 6-foot boat display, I knew I had to do it. So Sunday was my exorcism of this idea. </p><p>The story of Jack and Rose was the center of my theme. As an amateur baker, I was mostly interested in how <a href="http://www.ruffonicookware.com/">copper cookware </a>could help me in the kitchen with my holiday cookies:<br /><br /><span style="FONT-STYLE: italic">Bain Marie</span>: a fancy word for a double boiler. Copper heats evenly and that is important if you want your melted chocolate to be perfectly tempered (a.k.a shiny).<br /><br /><span style="FONT-STYLE: italic">Egg White Beating Bowl</span>: for whipping up egg whites into a frenzy. You need frenzied eggs for meringue and for some reason, the copper really aids in this. It's like science and stuff:-)<br /><br /><span style="FONT-STYLE: italic">Sugar Saucepan</span>: for caramelizing sugar. Apparently, copper maintains it's temperature better than other metals. My interest in sugar art is pique by the idea of this. If I had a nickel for every caramel I have broken, I could buy a bakery:-)<br /><br /><span style="FONT-STYLE: italic">Zabaglione Bowl</span>: for beating egg yolks and sugar together. Again, evenly conducted and maintained heat makes the perfect lemon curd (or any other curd for that matter).<br /><br />I did not know that such beautiful things existed and I found a place to buy <a href="http://www.ruffonicookware.com/">Ruffoni Copper Cookware</a>.
